Beetroot
Earthy & sweet

Crisp, sweet, with purple stems and a clean finish.
Microgreens are the first leaves of vegetables, cut 7–14 days after sowing. A small serving finishes two or three plates — it is not a bowl of salad.
Purple kohlrabi microgreens are crisp, sweet first leaves with violet stems. Closer to cabbage than to radish.
Enough to finish two or three plates. Scatter it; do not try to fill a salad bowl.
Sweet, crisp, lightly cabbage-like
Add to a crunchy salad or a sandwich. The stem is the point; it stays crisp if you add it at the end.
Young kohlrabi leaves. A mild brassica handful. We have not published lab figures.
