Red Amaranth Microgreens

Soft, earthy, lightly sweet, with deep red leaves.

Microgreens are the first leaves of vegetables, cut 7–14 days after sowing. A small serving finishes two or three plates — it is not a bowl of salad.

What this green is

Red amaranth microgreens are young lal chaulai: soft red leaves, earthy and mildly sweet. This pack is 250g, so it can go into a dish, not only sit as a garnish.

A 250g pack is several cooked portions. Wilt a handful into dal or eggs, and keep the rest dry in the fridge.

Taste

Mild, earthy, slightly sweet

On the plate

Treat it like tender chaulai. Stir into dal, khichdi, or scrambled eggs off a high flame. A few raw leaves are enough on rice if you want the colour without cooking the rest.

  • Wilt into dal or khichdi off a high flame
  • Fold into scrambled eggs
  • Stir through a simple saag
  • Scatter a few leaves on rice

Nutrition, honestly

Young amaranth leaves. No lab milligram figures. Cook it as a leafy green, in a larger serving than the 50g garnish packs.
