Red Cabbage Microgreens

Sweet, mild, with purple-red leaves.

Microgreens are the first leaves of vegetables, cut 7–14 days after sowing. A small serving finishes two or three plates — it is not a bowl of salad.

What this green is

Red cabbage microgreens are purple-red first leaves. Sweeter than radish, with only a light pepper at the end.

Enough to finish two or three plates. Scatter it; do not try to fill a salad bowl.

Taste

Sweet, mild, lightly peppery

On the plate

Use where you want colour: slaw, a grain bowl, or next to paneer. They are mild enough to eat as more than a pinch.

  • Scatter on a cabbage slaw
  • Finish a grain bowl
  • Pair with paneer or cheese
  • Add to mixed salads

Nutrition, honestly

Young red cabbage. Colour comes from the leaf, not a dye. No lab panel published yet.
