Fenugreek
Aromatic & bittersweet

Crisp, peppery, with a clean white-stem finish.
Microgreens are the first leaves of vegetables, cut 7–14 days after sowing. A small serving finishes two or three plates — it is not a bowl of salad.
White radish microgreens are young mooli leaves: clean, peppery, and sharper than turnip. Use a pinch.
Enough for several pinches on dal or toast. The pepper is clearer than cabbage and quieter than mustard.
Peppery, clean, lightly pungent
Finish dal, toast, or a sandwich. Add off the heat so the bite stays fresh.
